This recipe comes from the amazing book by Najmieh Batmanglij, Food of Life. I made advieh for basmati and fava rice.

Personally, I find spice mixes fascinating and mysterious bordering on scary. They’re so puzzling when you buy them pre-made. Whatever could be in these things? Chinese five spice is a perfect example. I look at it in its little jar on the supermarket shelf and become baffled. Yet when Heguiberto made it recently from scratch it suddenly became familiar and easy.

So with advieh, though there are some apparent variations. For example, Persian Kitchen adds nutmeg to the ingredients. Chowhound and food.com make theirs the same as Najmieh. However, Javaneh recommends lots more potential spices like star anise, zaafaran, pistachio, turmeric, ginger and many others. She seems to take a more free-form approach, which I always welcome.

Since I’m new at advieh, I basically stuck with the book. Of course, less is more when it comes to cinnamon at my house, so I reduced the total amount.

This is fun. In the act of preparing a spice mix, I always feel connected to the ancient and ongoing history of food.

basic advieh

2 tbsp dried rose petals
2 tbsp cardamom
1 tbsp cinnamon
1 tbsp cumin

Blend everything together in a spice mill or coffee grinder. Store in air tight container.

    Wow, this sounds great, its totally up my alley. I’m surprised I never heard of it before. So now that we have this incredible spice mix daaaahling, how do you recommend using it?

    I love making my own spice mixes since it lets me customize the mix for my tastes. This one sounds great, I really love the dried rose petals in there!

    Like you, I love to mix my own spices and sauces. This sounds devine, but like the HH asked, what do I use this on? I know you know your way around the kitchen, what are some of your al fresco dining go-to recipes? I’m looking to shake things up a tad.

    I’ve never heard of advieh. But I do love that assortment of spices. The rose petals are interesting as you have to be careful about using too much of those. You’re right, this would be great with rice.

    I fell in love with Persian cuisine after befriending Persians in LA, over twenty-five years ago; we used to make some at home and go eat it in one of many Persian restaurants that lined Santa Monica Blvd. So when I moved to Dallas, I missed it and bought that book and have made many recipes from it. It is one of my most cherished cookbooks, it is so elegant and beautiful with all these cultural aspects woven into it. I made fava rice this week; never made advieh, but I am keeping it in mind for next time I make Persian food; (I bought fenugreek at an Indian market)

    Home made spice mixes are usually way better! This sounds very interesting with the rose petals – I bet it’s super fragrant. 🙂
