Steven doesn’t like fake meat very much. “What’s the point?” he always says. I have mixed feelings about it too. But I also like adventure so I try it from time to time any time when I see something new in the market. I found this package of “soy chorizo” at our TJ’s last week and decided to buy it. I thought Steven was going to give me a hard time right away, so I sort of hid it under the other groceries in the shopping cart. Much to my surprise, when he saw me handing it to the cashier, he didn’t complain. Ever since we had this amazing seitan salad at the restaurant, Marnee Thai, he seems to have loosened up a bit.
Well once I got the soy chorizo home, it sat around for a while until I could come up with an idea on how to use it. Initially I considered a vegan feijoada, a popular Brazilian black bean stew usually loaded with “real” meat and sausages that are mostly from pork. A vegan version might have worked, but I only had the one soy chorizo. Perhaps another time.
Despite apprehensions, this soy chorizo really hit the spot. The fake sausage was loaded in spices so had intense flavor that really went well with the mild buttery extra large lima beans. This is the way phony meat should taste!
soy chorizo white chili
3 cups cooked large lime beans with juice
4 cloves garlic, minced
1 white onion, chopped
Freshly ground black pepper
salt to taste
1 soy chorizo, casing removed and crumbled
3 tbsp olive oil
Place oil, garlic and onion in a heavy pan and sauté until aromatic and translucent. Add crumbled soy chorizo. Continue sautéing for approximately 5 minutes. Add beans, bring to a boil and then simmer for 10 minutes. Serve with rice.

I can relate, I used to feel the same about “fake meat”; this one is great though, with the spices masking the “no-meat” aspect and the idea to mix it with beans is a great one.
